Ingredients

  • 1. 450g new potatoes
  • leave the skin on 2. 1 tbsp oil 3. 2 tbsp tomato purée 4. 400g chopped tomatoes 5. 270 ml water 6. 1 tbsp grated ginger 7. 3 large cloves garlic
  • crushed 8. 3 tsp sugar 9. 3 tsp salt 10. 300ml single cream or whisked plain yoghurt 11. 2 tsp honey 12. Oil to deep fry the potatoes For the spices 1. ½ tsp green cardamom seeds
  • ground 2. 2 tsp fennel seeds
  • ground
  • plus 1 extra tsp for adding at the end 3. 4 dried red Kashmiri chillies
  • ground 4. ½ tsp black cardamom seeds
  • ground 5. ½ tsp cumin seeds
  • ground 6. 1 tsp coriander seeds
  • ground 7. ½ tsp ground ginger 8. ½ tsp ground cinnamon 9. Chopped coriander
  • ground fennel and Kashmiri chilli flakes to garnish
